A delicious homemade casserole

Growing up down the street from your grandparents is the ultimate childhood dream. My sister and I would make our way down the road, stopping to say hello to the cows and horses first and then arriving at our grandparents house. Guarantee the cookie jar was full or a bowl of ice cream was waiting for us. Their house always smelled like something was baking in the oven, waiting for you to taste.

We lost our grandfather a few years ago but the memories are still strong, he was a quiet man but kind and you always listened when he had something to say. A stick of Wrigley’s gum was always waiting in his front shirt pocket, all you had to do was ask. My Grammie who just celebrated her 81st birthday is always a phone call away when I need help with a recipe or when a batch of bread goes wrong. Having five boys to care for and feed plus a husband she always had a home cooked meal on the table. This is one of my favorites that I recall my grandfather enjoying as well. It’s wholesome and quick, I hope you enjoy it as much as we do!

Grammie’s Tomato Mess

My Grandparent’s at Miscou Island, NB

Serves 4

1lb ground hamburger

1 cup white rice

1 cup elbow macaroni

28oz canned whole tomatoes

1 green pepper

1 onion

2 cups cheddar cheese

a handful of soda crackers

Cook hamburger in a skillet with the onions, about ten minutes or until onions are translucent. Add in the green pepper and cook until soft. While this is cooking boil water and add macaroni, when this is done set aside. Cook the rice as instructed at the same time and set aside. Mash the canned tomatoes in a bowl. Now that everything is cooked you’re going to layer each ingredient with cheese in a casserole dish or small a roaster . Top with cheese and crushed soda crackers. Bake at 350 degrees celcius until the cheese is melted on top. Grammie told me that she found this recipe in a cook book years ago but over time she’s made it her own.
